I am dreaming of replenishing my stock of herbs and spices. It is dreaming only because I have already bought the obvious. At its height my pantry had nearly 100 different herbs and spices - right now I am down to fortyish and suffering withdrawal symptoms.

Because I feel like making lists today, here is my dream shopping list. Some of the things on them are for teaching, not eating, so you don't need to worry about my sanity any more than usual. And this is *not* a hint list - it is just me talking about the state of my pantry - I love talking food as much as I love cooking and eating. This is the reduced version of the list....

Ancho chilli (I could add about 4 other chillis down too, and, in my dreams, more 100% chocolate, or that Mexican cinnamon-chocolate)
Angelica seed (Roman cooking again, but also as good with beans as epazote)
Bdellium (Guggal Gum) (I want this purely because it is available and I have never seen it- if I know of a use for something and haven't seen it then I need it - simple rule :) )
Bush tomato (try roast potatoes with butter and bush tomato crumbled into the centre after cooking)
Cassia buds (I still have a few of these, but adore them and need more. Think cinnamon but softer and sweeter.)
Chipotle Chilli
Celery Seed (technically for Roman cooking, but it really is awesome in stews and things, and especially in vegetarian food)
Cubebs (one of my favourite spices of all time - I am in cubeb withdrawal)
Epazote (magical ingredient for lots of South American and Texan style cooking - I love this and ran out of it ages ago)
File powder (my missing gumbo ingredient)
Frankincense (I just need a top up - my pieces of it are old and faint and I want to use them and can't till I have replacements for teaching)
Grains of paradise (I still have some of this, but it is good for cooking and good for teaching and very good for stirring, so I always wish for more)
Gum Arabic (another of the things I know but have not seen)
Gum Benzoin (good for perfumery stuff and teaching - I might still have some, now I think of it)
Lemon myrtle leaf (my favourite lemon flavour)
Long Pepper (for medieval cooking, of course!!)
Lovage (more Roman cooking)
Madder root (for teaching, truly)
Mastic (I had a whole packet, but it died at Conflux due to the sad advent of heavy weights)
Myrrh (I have some, and some myrrh perfume, but the gum is old and faint and needs replacing)
Myrtle leaf (not for eating - for the scent. I do have a bit left, but not much and I love this scent - it is the scent of Sabbath in Roman times)
Rue berries (great for Roman cooking, but I am out of them)
Rue leaf (I am almost out of this and the leaf is old and no longer bitter enough)
Silver leaf (my silver leaf also died at Conflux, but it died in a good cause...)
Spikenard (one of my hypocras ingredients and I am fully out of it)
Zedoary (for medieval cooking)
