girliejones about book cataloguing, it suddenly dawned on me that I have not made anything dairy for Shavuot. Jewish festivals are all about eating (to celebrate) or not eating (to mourn). Food is not the major reason we have festivals : it just feels like it.
Anyway, Shavuot food is all about dairy and I have not eaten anything today, so happily cooking away right now are things that are a cross between pancakes and omelettes. Two eggs, a little wholemeal flour, some instant yeast, and three big dollops of ricotta/spinach (Pantalica make a good mix of this, for lazy people like me who can't be bothered chopping fresh spinach). The first one stuck to the pan because it is so low fat and because I only used a spray of oil. It was light as a feather though, and tasted adorable. The second one has scads of olive oil between it and the pan.
Now all I need is a name for it.
