Honey Cake

Today I'm shopping for honey cake ingredients. Jewish New Year is, after all, on Friday. This year I'm going to anticipate all my friends saying "I know you gave me a recipe last year/ages ago, but would you mind finding it for me again?" and make it possible for me to laugh in a cavalier fashion and say "I've already blogged it." If I were meaner I would say "Find your own recipe," but this particular one tends to get comments like "Best cake I ever tasted" and this is a tough year for many people and they need cake of this calibre.

I'm not going to name the relative who said about someone else's honey cake "I don't like it, but it's there and it's in front of me so I'm eating it." This is not that kind of cake.

Ingredients:

500 g honey(or a bit less)
1 cup sugar
1 ½ cups plain flour
1 ½ cups SR flour
juice and rind of one orange (a nice big one - but you can replace some of the juice with brandy or other alcohol)
at least two heaped tbs. good, rich cooking chocolate
1 dessertspoon instant coffee
approx. 1 cup oil (a salad oil is best, but not olive)
3-4 extra large eggs
½ tsp. vanilla
1 tsp. bicarbonate of soda
1 cup boiling water
about a cup of your favourite dried fruits and nuts (chopped)
1 tsp. of cinnamon, ginger, allspice, nutmeg and a taste of cloves (NOT 1 tsp. of each)


Method:

Beat eggs, sugar, oil and honey. Add orange rind and juice. Add spices. Sift both flours with soda. Add to liquids. Add chocolate, coffee, vanilla, fruit and nuts. Mix well. Add boiling water.

Pre-heat oven to 500°F. When you put the cake in, reduce heat to 350°F. After and hour, reduce heat again, to 300°F until the cake is done (normally another 15-20 minutes).


PS I always put in extra chocolate and I always choose my fruit very carefully. Apricots and crystallised ginger are my favourites. My grandmother used to use walnuts or pecans, but I leave the nuts out entirely these days. I also use strange spices, but the mixture my grandmother used (the one above) is yummy.
